The wines that come from Recaredo’s estates are born from a very specific purpose: to faithfully express the character of a place. Each bottle is an interpretation of a landscape, of soils and vineyards cultivated for decades with a respectful approach towards the environment. We do not seek uniformity, but rather the authenticity offered by the family’s unique plots located in the heart of the Penedès.

The winemaking process follows this philosophy through minimal intervention and long ageing on lees, preserving the identity of each wine. The result is deep, precise wines with remarkable ageing potential, where time and origin are naturally expressed.

Subtil and Serral del Vell: two interpretations of a landscape

Each estate wine reveals a different way of interpreting the territory:

Recaredo Subtil expresses the delicacy and finesse of the Roure vineyards, where the grapes used in its production come from. Its extraordinarily subtle bubble, with delicate integration, accompanies a profile marked by white fruit notes, perfectly integrated ageing and an enveloping texture that preserves vibrant tension and great freshness.

Recaredo Serral del Vell, made from one of Recaredo’s historic estates, conveys the depth of calcareous soils and the personality of a hillside vineyard. It is a structured wine, with pronounced minerality and remarkable ageing capacity, highlighting the potential of indigenous varieties cultivated in an exceptional environment.

Artisanal crafts that preserve the identity of the wine

The uniqueness of an estate wine is also built in the winery, where artisanal crafts form an essential part of the winemaking process.

Manual riddling on pupitres allows the lees to be slowly concentrated through the individual turning of each bottle, respecting the natural rhythm of ageing. Likewise, manual disgorgement, carried out bottle by bottle without freezing the neck, preserves the purity and expression of the wine.

Throughout the ageing process, we use exclusively natural cork stoppers, a material that encourages a slow and harmonious evolution. These gestures reflect Recaredo’s commitment to an artisanal, honest and respectful approach to winemaking, preserving the origin of each wine.

What exactly defines an “Estate Wine” at Recaredo?

An estate wine is one that comes exclusively from vineyards selected for their homogeneous soil characteristics, orientation and microclimate. Unlike generic sparkling wines, these bottles do not blend grapes from different areas of the region; instead, they focus on capturing the pure and profound essence of a specific place, offering a much more precise, complex profile that faithfully reflects the geological singularities of the terroir.

Why is natural cork important during long ageing?

At Recaredo, we exclusively use natural cork stoppers throughout the entire ageing process on the lees, a decision that is part of our way of understanding the production of great sparkling wines. Cork is a natural and recyclable material that encourages a slow and balanced evolution of the wine, preserving its identity and allowing the passage of time to express itself harmoniously.

In estate wines, which remain in contact with the lees for five to seven years —or even longer— the cork stopper helps preserve the wine’s precision, depth and aromatic complexity. The result is bubbles with extraordinarily subtle integration, a creamy texture and an expression that combines freshness, tension and elegance, qualities that can only be achieved through long ageing.

Is any type of sugar added to these estate wines during disgorgement?

No. All of Recaredo’s Corpinnat sparkling wines are strictly Brut Nature. After the artisanal manual disgorgement process, carried out to remove the lees, the bottle is topped up exclusively with wine from another identical bottle, without adding expedition liqueur or sugars. It is our uncompromising commitment to transparency and honesty, allowing consumers to enjoy the wine in its purest and most authentic form.
